Tomato and Charred Pepper Farro Salad

This Tomato & Charred Pepper Farro Salad is super bright & tasty! It mixes the nutty flavor of farro with sweet, ripe tomatoes and smoky charred peppers. Tomato & Charred Pepper Farro Salad

Ingredients:

  • 1 c. pearled farro, rinsed
  • 3 peppers (red, yellow, orange), quartered, seeds removed
  • 3 tbsp. scallions
  • 2 tbsp. red wine vinegar
  • 1/2 tsp. ground cumin
  • 1/4 tsp. red pepper flakes
  • 1 pt. grape tomatoes (mixed sizes & colors), chopped


Directions:

Step 1: Cook farro according to the package instructions. Get your grill ready on medium-high heat.

Step 2: While that's happening, take a big bowl and toss your peppers with 1 teaspoon of oil & a little salt and pepper. Grill those until they are slightly charred—about 2 to 3 minutes on each side! Don’t forget the scallions! Grill them until charred too—just 1 to 2 minutes per side will do. When they’re done, move everything to a cutting board and chop the peppers into pieces. Slice about an inch from the white part of each scallion and then cut the rest into smaller pieces.

Step 3:  In that same big bowl, mix together the vinegar, cumin, coriander, red pepper flakes, the rest of the oil, & some salt and pepper (about half a teaspoon each). Now add in your tomatoes, grilled peppers, sliced scallions, and farro. Toss it all together nicely! Finally, fold in any remaining scallion bits.
